JOB DESCRIPTION Dietary Manager REPORTS TO: Executive Director SUPERVISES: Cooks QUALIFICATIONS: A candidate for Dietary Manager must possess exemplary work ethics. Must have a minimum of five years' experience in staff supervision, food purchasing for restaurant or institution, and cooking for restaurant or institution. Must be able to read, write, and speak English so as to order food supplies, follow written recipes and menus, and understand and be understood by residents, staff, and families. Must be able to lift, carry, push, and pull minimum of 40 pounds. Must be able to move about the community quickly and be able to physically assist residents and/or staff in event of an emergency. RESPONSIBLITIES: * Is responsible for the community's dining service program by properly managing the department and by performing relief Cook responsibilities per schedule and additionally as needed. Communicates openly with Executive Director and Dining Service consultant regarding areas for improvement and new improved ways to provide highest quality meal service available. * Purchases food, equipment, and supplies within budgetary allowances. Assures that groceries and supplies ordered are received and that vendors' invoices are correct. * Assures that the meals served to residents are consistently high in quality: (1) meals are in accordance with established menu, (2) are prepared to be tasty and nutritious, (3) are attractive in appearance, (4) are served timely and at appropriate temperatures. * Assures that any special Dining Service needs are known and that meals are prepared and served accordingly to all residents with such special needs. * Participates in the selection of Cooks and assures that they are properly trained and capable of performing their responsibilities. Monitors performance of staff on an ongoing basis to assure responsibilities are being fulfilled appropriately. * Assures that kitchen and food is maintained in accordance with local and State health department rules and regulations and company policy. Assures that staff observes proper hygiene and sanitation procedures in all aspects of their daily needs. * Establishes and assures compliance with routine cleaning and equipment maintenance procedures. * Maintains staff schedule in accordance with company policy and procedures. Is responsible for assuring that sufficient staff is on duty at all times to meet the needs of residents and company policy. * Assures that records are prepared and maintained in accordance with company policy and procedures and State licensing requirements. * Plans, purchases, and prepares food services for special events, marketing promotions, and activities. Communicates with Activity Director and Sales Director to assure needs are known and met. * Attends all meetings and in services as requested by Director. * Is observant and aware of any situations or occurrences in the community that may pose a safety hazard to residents or staff. Report such observation immediately to supervisor. * Performs job duties in accordance with safety rules. * As a member of the management team, works in conjunction with other department heads to assure building and resident care standards are met and that management and staff morale remain high. * Performs other duties as may from time to time be requested by Executive Director.
