Job Title: Director of Catering Location: The University Club of Memphis, Memphis, TN Reports To: General Manager / COO Employment Type: Full-Time, Exempt Position Summary: The Director of Catering drives event sales, enhances member engagement, and ensures flawless execution of all private, club-sponsored, and member-hosted events. This role plays a key part in increasing revenue through strategic sales growth while upholding the highest standards of service and hospitality that define our racquet club experience. Key Responsibilities: Sales & Revenue Growth * Develop and implement sales strategies to grow catering revenue through club member events, private bookings, and sponsored events. * Cultivate relationships with members and prospective clients to generate leads and secure bookings. * Identify new opportunities for revenue within the club's event spaces and tailor packages to member interests. Event Planning & Execution * Oversee the complete life cycle of events--from inquiry to execution and follow-up--ensuring all events align with club standards. * Prepare, manage, and distribute Banquet Event Orders (BEOs) in a timely, accurate manner. * Chair weekly BEO meetings with departments. * Forecast food, beverage, and labor needs based on event schedule and trends. * Coordinate with culinary, service, and facilities teams to ensure seamless event delivery. Training & Service Excellence * Train and supervise service staff on catering protocols and member service expectations. * Lead pre-event meetings and post-event evaluations to ensure continuous improvement. * Maintain premium levels of service, anticipating guest needs and exceeding expectations. Administrative & Reporting Duties * Ensure all events are posted accurately in internal systems/calendars. * Works closely with chefs and other appropriate staff to ensure the smooth and healthy operation of the catering department. * Track event performance, against forecasts and budgets. * Regularly report sales metrics, forecasts, and event feedback to senior leadership. * Ensures that all food and beverage operations comply with all legislated health and licensing guidelines and adhere to all health and safety regulations and procedures. * Possesses and maintains thorough knowledge of all menu items, preparation methods/times, ingredients, sauces, portion sizes, presentation, and prices. * Prepares accurate and timely reports as required. * Coordinates all training activities for restaurant FOH/BOH and service employees, including identifying and analyzing training needs and designing and implementing programs to address these deficiencies. * Reviews staffing daily to ensure it is adequate to handle the day's business; calls in additional personnel as needed. * Assists staff with job functions as needed to ensure optimum service to all guests. * Qualifications: * Minimum 5 years' experience in managing catering, hospitality, or private club events. * Strong background in sales with proven results in event revenue growth. * Expertise in BEO preparation, forecasting, and cross-departmental coordination. * Excellent organizational, interpersonal, and leadership skills. * High attention to detail and ability to thrive in a service-focused, member-oriented environment. * Proficient in event software and Microsoft Office Suite. Knowledge of Jonas or similar club management and payroll systems is a plus. Work Environment: * This hands-on role requires evening, weekend, and holiday availability based on event schedule. * Collaborative team setting within a professional, high-touch private club atmosphere.The University Club of Memphis
